Sunday Supper

I'm delighted to have my own kitchen again. It means I'm cooking again. I think being in the kitchen cooking and listening to something awesome (music or NPR) is one of my most happiest states of being. Yesterday I made a big pot of gumbo and it was pretty darn delicious. As usual, I kind of made it up so it may not even be a proper "gumbo." But it was a spicy and hearty bowl of warm goodness so I was happy. It was a lovely way to wrap up the weekend.

My Made Up Gumbo:

-3 cloves garlic
-half an onion
-green pepper
-yellow squash
-spices: oregano, thyme, chili powder, paprika, cumin and dried chili flakes
-1 can red kidney beans
-1 big can of chopped tomatoes (I got the spicy kind)
-hot sauce
-1/2 cup of quick cooking brown rice
-Andouille sausage (I used two chicken sausage links) *(I REALLY wanted okra and collard greens but my tiny grocery store did not have either of these items).
-saute the onion, garlic and green pepper for about 5 minutes
-add chopped squash and sausage
-add first round of spices (about 1/2 teaspoon of each one or to taste + add salt and pepper)
-add tomatoes, beans and rice
-add more spices and hot sauce if you want (I like things on the spicy side)
-bring to a boil and then simmer for about 15 minutes
