A Very Happy Happy Hour

When in Vegas earlier this year I had a cocktail called a Moscow Mule that I became obsessed with. In fact, it might have been the best cocktail I've ever tasted (you know I'm a fan of hyperbole). In fact, I enjoyed it so much I went back to the restaurant the next night to partake in another two. I even chatted up the bartender about recreating it once I got home. It took me awhile to give a try but I finally gave it a shot with my pals last weekend and I think I've got it all figured out. It is the perfect summer cocktail, light and a lil' fizzy and very refreshing.

It starts like a mojito; muddle lime juice, fresh mint and sugar (or splenda, if you prefer) in a tall glass. Then add your preferred amount of vodka and fill the rest of the glass with ginger beer. I think ginger beer is a little tricky to find so I went to Whole Foods (obvie) and bought two varietals in case one was weird. Turns out it was a good call because one of the ginger beers I got was kind of spicy so the other one balanced it out quite well. Add some ice and enjoy your delicious creation.
