Summer-y Salads


I am a huge salad fan and could eat one for every meal I am quite sure. And there is no better time than summer to enjoy countless salads They are cool and refreshing and the prep is usually pretty minimal. My hero, the culinary genius Mark Bittman put together this awesome list; 101 Simple Salads for the Season. They all sound so amazing and his style is so simple and effortless. He puts amazing ingredients together with ease but it never seems overly fancy or like something you couldn't pull off. I really love that man. Oh, and now I'm starving.

Here's some of the standouts:

6. Sichuan slaw: Toss bean sprouts, shredded carrots and celery, minced fresh chili, soy sauce, sesame oil and a bit of sugar. Top with chopped peanuts and chopped basil, mint and/or cilantro. (The full trio is best.)

44. Make a crisp grilled cheese sandwich, with good bread and not too much good cheese. Let it cool, then cut into croutons. Put them on anything, but especially tomato and basil salad. This you will do forever.

77. Combine shredded cabbage or lettuce with bits of good turkey, Swiss cheese and rye croutons.
