I know I've been posting lots about this bbq/mexican feast we hosted, but it was just so much fun and so tasty that I have to keep harping on it. We did a simple marinade for chicken and steak and tossed them on the grill for tacos. We wanted lots of delectable items to top them with; chopped jalapenos, cotija cheese, cilantro, onions and the delicious salsa verde courtesy of sis that I already told you about. We also wanted an something to add a little crunch so I whipped up a delectable mexican slaw which is always ever so tasty in tacos if you ask me.
5-6 cups shredded cabbage (I did a mix of red and normal)
Medium onion, thinly sliced
2 cups of sour cream
1/2 cup mayo
1 jalapeno, stemmed, deseeded and finely chopped
juice and zest of one lime
2 tablespoons of cumin
2 teaspoons chili powder
salt and pepper
In a small bowl combine sour cream, mayo, lime zest and juice, chopped jalapeno, cumin, chili powder and salt and pepper to make dressing. Put onions and cabbage in a large bowl and mix dressing in. Add more salt and pepper or spices to taste. Cover and chill for a few hours. Delish.
