As promised, here's the recipe for the awesome salsa verde that my sis (the culinary genius) made for our taco bbq fiesta on Saturday night. I awkwardly took pictures of her making it. Although a bit time consuming and involved, it actually seemed pretty easy to make and it was so very tasty on the simple chicken and steak tacos we served. We put the left over magical green liquid in a mason jar and have been snacking it on ever since. I highly recommend trying this. Plus it is just the prettiest shade of green.
2 lbs tomatillos
2 jalapenos, stemmed and deseeded
bunch of cilantro
1 large onion, quartered
12 cloves garlic
juice of 2 limes
salt and pepper
Remove papery skins and wash tomatillos. Bring a large pot of water to a boil and add tomatillos, onion, garlic and jalapenos. Turn to low and simmer for about 15 minutes or until tomatillos are soft. Drain and reserve a quarter cup of the cooking water. Add cooking water, lime and roughly chopped cilantro and blend until smooth. A hand blender works perfectly for this but you could easily use a regular blender.
