Thanksgiving Pie, anyone?

Although I was sad to see my mom and nephew depart Sunday afternoon, my spirits were buoyed by the fact that I’ll be leaving for Christmas in ATL in about 3 weeks AND the holiday season has officially started. Yahoo. I do happen to love this time of year, don’t you? Now onto some important chatting about food.

One of my favorite parts about Thanksgiving is the leftovers. I usually make extra just to be sure there are plenty of leftovers to munch on for the next few days. And this year was no different. We had a relatively small group but a huge spread of food and due to the high amount of leftovers this year I was forced to get creative. Meet Thanksgiving Pie: a pie pan filled with layer upon layer of whatever carby goodness and turkey and other fixins you have leftover from the big day. Mine was a layer of mac and cheese, then stuffing, cranberry sauce, turkey drenched in gravy and topped with a thick and creamy layer of mashed potatoes. A quick 30 minutes in a 350 degree oven until the potatoes are golden brown and hello new friend. I love you, Thanksgiving Pie!

It’s not exactly healthy, but it sure is good.

    Whoa. I didn’t know what to think about this concoction, but then I mulled over the marriage of those flavors. Have to say, I could use a piece of that right now!
